Popsicle ingredients:

1 box instant chocolate pudding mix (3.9 ounce box)

2 1/2 cups whole milk

2 Tablespoons special dark cocoa powder

Decoration ingredients:

3 ounces semi-sweet chocolate chips + 1 teaspoon coconut oil

8 ounces white chocolate + 4 Tablespoons coconut oil

Equipment:

Ice pop molds (or paper cups and popsicle sticks)

Piping bags

Bowls

Whisk

Baking sheet

Wax paper

To make the popsicles, whisk together pudding mix, milk, and cocoa powder in a bowl until combined. Pour into ice pop molds and insert sticks. If using paper cups, add foil over the top and poke a popsicle stick through the foil to hold it in place while they set. Freeze for at least 6 hours or overnight. Prepare a baking sheet with a piece of wax paper. Remove the pops from their molds (run hot water over them to release if using plastic molds). Lay the pops out on the prepared baking sheet and return to freezer while preparing decorations. Melt semi -sweet chocolate chips and coconut oil together in a microwave safe bowl in 30 second intervals stirring between each interval until melted. Melt white chocolate and coconut oil together in a microwave safe bowl in 30 second intervals stirring between each interval until melted. Once chocolate shell is cool enough to handle, transfer to piping bags. Cut the tip of the bag with a 1/8 inch opening. Chocolate mix will be thin but will set quickly on contact with the cold pops. Decorate away! Return pops to freezer for a few minutes for decorations to further set. if not consuming immediately, store in an airtight container in the freezer.
