Candy Corn Elotes

Make candy corn a main dish at your next cookout with this Mexican street corn in disguise

This spin on Mexican street corn was created for our Halloweenland themed party in 2022. We wanted a fair/fall festival theme to the menu with grabbable foods and touches of nostalgia. The key to a successful party is including menu items that are easy to make and scalable for a crowd. These elotes check all the boxes.


Ingredients:

Fresh corn on the cob - 1 per guest

Mayonnaise - 1 Tablespoon per ear of corn

Crema mexicana - 1 teaspoon per ear of corn

Chili-lime seasoning such as tajin - 1 teaspoon per ear of corn

Cotija - 1 teaspoon per ear of corn

Instructions:

Shuck the corn. Bring a pot of salted water to a boil. Add the corn and cook for 5 minutes. While the corn is boiling, mix mayonnaise and crema in a bowl. Use tongs to remove the corn to a baking sheet. Using a pastry brush, slather the top two thirds of each ear of corn with the mayonnaise mixture. Sprinkle chili seasoning on the center section of the corn and sprinkle cotija on the top section of the corn to generate the candy corn pattern.

Notes: This recipe is written to allow you to make as few or as many elotes as you need. Leave the corn whole if it will be a side dish at your gathering. Cut the corn cobs in half if you need a more snackable size.
