Pie spiced cold brew

Though it’s still officially summer in the Northern Hemisphere, the days are shorter and we’re starting to crave flavors reminiscent of fall here at the farmhouse. Dust off your cauldron and brew a batch of this spiced cold brew coffee for the transition from the scorching summer sun into the crisp autumn air.

Ingredients for a quart of coffee concentrate:

  • 1 cup coarse ground coffee

  • 4 cups water

  • 4 teaspoons pie spice mix (recipe follows)

Pie spice mix (makes 4 teaspoons):

  • 3 1/4 teaspoons cinnamon

  • 1/4 teaspoon ginger

  • 1/4 teaspoon nutmeg

  • 1/8 teaspoon allspice

  • 1/8 teaspoon cloves

Ingredients for a 12 ounce latte:

  • 1 cup of pie spiced cold brew concentrate

  • 1/2 cup milk (any kind you like)

  • 1 teaspoon maple syrup (optional)


Measure spice mix into a tea bag and add it to a mason jar or French press. Add coarse ground coffee to the vessel on top of the spice bag to help it stay immersed. Pour cool water over the ground coffee. Cover and let sit overnight. It should steep for at least 12 hours but up to 18 hours. When ready, strain the mixture with a fine mesh if using a mason jar or simply push down the plunger of the French press. Place your pie spiced coffee concentrate in a clean jar and store in the refrigerator until ready to use.

To make a latte, stir together pie spiced cold brew concentrate, milk, and maple syrup. Add to a glass with small amount of ice to avoid over diluting the beverage.
